On a 12 core machine it takes us about 2 hours of encoding for a minute of footage.

Ah ok, that would probably be overnight encoding sessions for me then.

We use a ffmpeg version compiled specifically for 10 bits encoding. You can find all of this on doom9.

You're probably fully aware, but Handbrake now do 10bit HDR X.265 encodes, you just have to get a standalone dll not included for whatever reason , and it works great.

I had seen it was possible, but I have never tried it. We have a nice single line command line to do the encoding so it's usually good enough for us. Now the real challenge is to be able to use avisynth (or any more modern equivalent) to do HDR encoding.

I was thinking of leaving the Inferno connected to my PC 24/7, do you know if it adds any lag?
